These sweet strawberry shortcake cheesecake rolls transform ordinary flour tortillas into a spectacular no-bake dessert that captures the essence of summer. The combination of creamy cheesecake filling, fresh strawberries, and crunchy shortcake crumbs creates a delightful treat that looks as impressive as it tastes.

Ingredients:
1 sheet puff pastry, thawed
1/2 cup fresh strawberries, finely chopped
4 oz cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1/4 cup strawberry jam
1 egg (for egg wash)
1/4 cup crushed golden sandwich cookies (for topping, optional)
1 tablespoon melted butter (for brushing)
Directions:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth.
On a lightly floured surface, unfold the puff pastry and gently roll it out to slightly enlarge. Spread the cream cheese mixture evenly over the surface.
Spread a thin layer of strawberry jam over the cream cheese, then sprinkle the chopped strawberries on top.
Starting from one edge, roll the pastry tightly into a log. Slice into 6–8 even rolls.
Place the rolls flat on the prepared baking sheet. Brush the tops lightly with egg wash.
Bake for 18–22 minutes or until golden and puffed.
Once out of the oven, brush with melted butter and sprinkle with crushed cookies for a shortcake-style topping, if desired.
