Mini Made potato cakes

2 cups mashed potatoes
1 egg, beaten
1/2 cup all-purpose flour
1/4 cup breadcrumbs
1/4 teaspoon salt
1/8 teaspoon black pepper
Vegetable oil, for frying
Preheat oven to 200 degrees F (93 degrees C).
In a large bowl, combine the mashed potatoes, egg, flour, breadcrumbs, salt, and pepper.
Mix well until all ingredients are combined.
Form the mixture into small patties, about 2 inches in diameter.
Heat the vegetable oil in a large skillet over medium heat.
Fry the potato cakes in batches for 2-3 minutes per side, or until golden brown and cooked through.
Drain the potato cakes on paper towels.
Serve immediately or place on a baking sheet and bake in the oven for 10 minutes to crisp up.
