°1 cup water
°1/2 cup butter
°1/4 tsp salt
°1 cup all-purpose flour
°1 cup thick cream
°1/4 cup powdered sugar
°1 tsp vanilla extract
Preheat oven to 400F. Line baking sheet with parchment paper.
In saucepan, bring water, butter & salt to a boil on medium-high heat. Once the butter has melted, add the flour all at once and stir constantly until the mixture forms a ball and moves away from the sides of the pan.
Remove the pan from the heat and let cool for a few minutes. Add the eggs one at a time, stirring vigorously after each addition until the dough is smooth and shiny.
Using a spoon or socket bag, place the dough in small rounds on the prepared baking sheet.
Bake for 20 to 25 minutes or until the flakes are golden brown and crispy. Removing from the oven and let cool.
In a medium mixing bowl, beat the thick cream, powdered sugar and vanilla extract until stiff peaks form.
Once the pastries have cooled, cut them in half horizontally and fill them with the whipped cream mixture.
