🌭 For the Sausage & Base:

1 lb Kielbasa sausage, sliced

1 medium onion, chopped

2 cloves garlic, minced

🍅 For the Sauce & Pasta:

1 (28 oz) can crushed tomatoes

4 cups chicken broth

1 (12 oz) package egg noodles

1 tsp Italian seasoning

½ tsp smoked paprika

¼ tsp red pepper flakes (optional)

🧀 For the Creamy Finish:

1 cup shredded cheddar cheese

½ cup heavy cream

2 tbsp fresh parsley, chopped (for garnish)

1️⃣ Brown the Kielbasa:
In a large pot or Dutch oven, cook the sliced kielbasa over medium heat until browned.
Add chopped onion and cook for about 5 minutes, until softened.
Stir in minced garlic and cook 1 minute more until fragrant.

2️⃣ Add Liquids & Seasoning:
Pour in crushed tomatoes and chicken broth.
Bring to a boil, then stir in egg noodles, Italian seasoning, smoked paprika, and red pepper flakes if using.

3️⃣ Simmer It Down:
Reduce heat to low, cover the pot, and simmer for 15–20 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.

4️⃣ Make It Creamy:
Remove from heat. Stir in shredded cheddar and heavy cream until the sauce is smooth and creamy.

5️⃣ Garnish & Serve:
Sprinkle with fresh chopped parsley and serve hot in big bowls!
