Kielbasa and Cabbage Soup 

Ingredients:
1 tbsp olive oil or butter 
1 lb kielbasa, sliced into rounds 
1 large onion, diced 
3 cloves garlic, minced 
4 cups green cabbage, chopped 
3 medium carrots, diced 
2 medium potatoes, diced 
6 cups chicken or vegetable broth 
1 tsp smoked paprika 
1 bay leaf 
Salt and pepper to taste
Chopped fresh parsley, for garnish
(optional)
Instructions:
Cook the Kielbasa: Heat olive oil in a large pot over medium heat. Add kielbasa and cook until browned, about 3-4 minutes. Remove kielbasa from the pot and set aside.
Sauté Vegetables: In the same pot, add diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Add Cabbage and Seasoning: Add the chopped cabbage, carrots, potatoes, and return the kielbasa to the pot. Stir in smoked paprika, bay leaf, and season with salt and pepper.
Add Broth and Simmer: Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, until the vegetables are tender.
Serve: Remove the bay leaf. Garnish with chopped parsley if desired, and enjoy warm with crusty bread or crackers.
