INGREDIENTS
Crust
200 g graham crackers or digestive biscuits, crushed
80 g unsalted butter, melted 🧈
2 tbsp sugar
Filling
230 g cream cheese, softened
1 can (395 g) sweetened condensed milk
120 ml frozen lemonade concentrate, thawed 🍋
1 tsp lemon zest
200 ml heavy whipping cream, whipped to stiff peaks
Topping
Extra whipped cream
Lemon slices or zest curls for garnish
INSTRUCTIONS
The first slice glides through like a dream—firm yet soft, tart yet creamy, finished with a swoosh of whipped cream.
Make the crust 🥣
Mix crushed biscuits with sugar and melted butter. Press firmly into the base and sides of a 23 cm pie dish. Chill for 30 minutes.
Whip the filling 🍋
Beat cream cheese until smooth. Add condensed milk, lemonade concentrate, and zest. Mix until creamy and fully combined.
Fold in whipped cream 🍦
Gently fold in the whipped cream to keep the filling light and fluffy.
Fill & chill ❄️
Pour the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours or overnight until set.
