Cheesy Queso Taco Pasta
Ingredients:
• 16 oz penne pasta
• 2 tablespoons olive oil
• 1 lb ground beef
• ½ yellow onion, diced
• 2 bell peppers, diced
• 1 packet taco seasoning
• 16 oz queso cheese dip (such as Gordo’s)
• 10 oz can diced tomatoes with green chilies
Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the penne and cook until al dente, following package instructions. Drain and set aside.
2. Sauté the Veggies:
In a large skillet over medium-high heat, warm the olive oil. Add the diced onion and bell peppers. Sauté for 3–4 minutes, until just softened.
3. Brown the Beef:
Add the ground beef to the skillet and cook, breaking it apart, until browned and no longer pink. Drain any excess fat.
4. Add the Seasoning:
Sprinkle in the taco seasoning and cook for another minute, stirring so all the beef and veggies are coated.
5. Combine Everything:
Add the cooked penne to the skillet. Pour in the queso dip and the diced tomatoes with green chilies. Stir well until everything is coated in that creamy, cheesy taco goodness.
6. Serve:
Dish up the hot, cheesy taco pasta into bowls and dig in!
