Cheesy Quesarito (Taco Bell Copycat)

Double-layered cheesy tortillas loaded with seasoned beef, creamy chipotle sauce, and gooey nacho cheese—this homemade Quesarito is even better than the drive-thru!

Ingredients:
1 lb ground beef
1 packet taco seasoning
½ cup water
2 cups cooked rice
¼ cup sour cream
1–2 tbsp chipotle peppers in adobo sauce (minced)
1 cup nacho cheese sauce (store-bought or homemade)
1 cup shredded Mexican blend cheese
4 large flour tortillas
4 smaller flour tortillas

1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add taco seasoning and water. Simmer for 5 minutes.
2. In a small bowl, mix sour cream with minced chipotle peppers to make the chipotle sauce.
3. Warm both tortilla sizes slightly so they’re easy to fold.
4. Place a small tortilla in the center of a large tortilla. Sprinkle shredded cheese between the layers to help them stick.
5. Layer the center with rice, seasoned beef, nacho cheese, and a drizzle of chipotle sauce.
6. Fold the tortilla like a burrito—sides in, then roll tightly from the bottom up.
7. Heat a skillet or grill pan and toast the Quesarito seam-side down until golden and crisp, about 2 minutes per side.
8. Slice and serve hot with extra chipotle sauce or sour cream.
